Garlic Scapes

Q: What the heck is a garlic scape?

A: I'm so glad you asked. A garlic scape is the reproductive part of hard neck garlic varieties. Garlic is an allium, and a bulb, so if you've ever planted either a flowering allium or any kind of bulb in your garden, you should be familiar with this concept. Imagine you planted a daffodil. The scape is to the garlic what the daffodil and stem is to the daffodil bulb. We harvest the scapes before the blooms open. Occasionally we miss some and end up with volunteer garlic.

 

Q: What do I do with scapes?

A: Eat them! You can use scapes in literally any recipe that calls for garlic, and perhaps even more! Scapes can be put in casseroles, stir frys, mashed into potatoes, grilled on a skewer, and anything you can imagine. The general consensus is that they make amazing pesto and are killer when deep fat fried. We've accumulated a number of recipes on our Pinterest page, so check it out for more ideas.

 

Q: What do scapes taste like?

A: You mean besides delicious? They have a mild garlic flavor.

 

Q: When are scapes available?

A: During a three or four week window in early summer. Any scapes we don't sell get chopped off and put into our compost pile (or frozen to be eaten at a later date....did I mention you can freeze scapes? [use within a month for the best flavor])

 

Q: Which stores have scapes this year?

A: So far in 2016, we've sent scapes to Hy-Vees in Kearney, Lincoln (48th & O, 72nd & Pioneers) and Omaha (180th & Pacific, Fort Street)
